Based on this list, is it safe to say that E>I only occurs with -IR verbs, and therefore, -AR and -ER verbs do not have this possibility. If so, it might be helpful to put a note at the top of this list that E>I only occurs with -IR verbs, unlike E>IE which can occur in -AR, -ER, and -IR verbs.

Is the rule for the position of the Me in both sentences that there are two clauses, the second being subjunctive and the verb reflexive therefore owning the M1e? I was confused because both the first and second verbs are conjugated.

i think that a better answer to question would be "i am someone who really enjoys doing sports", rather than "i am more someone...". because otherwise it should have been "yo soy mas de hacer deporte"
