I'm confused about quantity and how that relates to singular or plural form of ninguno/ninguna.

No me gustan los tatuajes y por eso no tengo ________.

Shouldn't it be "ningunos" because tatuajes is masculine and plural?

Hola Tonya

If you look again in the lesson, towards the end there is an explanatory note saying that we hardly use "ningunos/-as" in plural, only when this is referring to nouns that are used in their plural form all the time like "gafas" (glasses) or "pantalones" (trousers). But generally you will find it in the singular form to refer to "any" as a pronoun.

I hope this clarifies it.
