Why in the test question "do you like maths" is the te gusta option not correct? I don't consider the word maths to be a plural word.

In Spanish we always use this word in plural "las matemáticas"; this is why we cannot say "me gusta las matemáticas" but "me gustan las matemáticas".

English English (as opposed to N American English), like Spanish, also uses the plural word maths.
