Nevermind; I figured it out. It's the tú imperative of estarse. I had never seen it before.

Yes, that's it. It's very often used in sentences of this type when we use the imperative:

¡Niño, estate quieto!

Boy, stand still!

Estate pendiente de la comida, que voy a salir un momento.

Keep an eye on the food, I'm popping out just for a bit.

Viene el profesor, estaos calladitos.

The teacher is coming, be quiet.
