Wouldn't "Le gustaría explicarme..." be just as polite a question as "Podría explicarme..."?

It wouldn't work the same way. It would lose the nuance of a person needing an explanation about something. "¿Le gustaría...? would focus on the person's willingness to explain something ( = Would you like to explain this to me? are you happy to do that?) rather than the ability with ¿podrías...? ( = I need you to explain something to me, could you do that/are you able to do that?)
