Hacer vs verb itself
May I ask if there is a guide on this?
When do we use hacer + noun for an activity e.g hacer esquí versus using the verb itself e.g esquiar ?

There is no specific rule for this, hacer can be used with lots of activities/sportsÑ hacer yoga, hacer natación, hacer surf, etc... although it doesn't sound so well with some of them, for example, I'd never say "hacer fútbol.
