Can someone please explain in a way that's dumbed down when you'd use eres vs es in a sentence and why?

The difference between “es” and “eres” is simply who you are talking about. “Es” means he/she/it is, while “eres” means you are (when talking to one person).
For example, you would say “Él es alto” (he is tall), but “Tú eres alto” (you are tall).
So it’s not about the meaning changing, just the subject of the sentence.
