No, “en ellos” after fiaría would not be used to mean “them” referring to people. With the verb fiarse, the required preposition is de, not en, so when we say we don’t trust someone, we must say “no me fiaría de ellos”, not en ellos. The structure fiarse en is not used in this sense.
In your sentence, the correct version would be: Por muy atractiva que sea la oferta, yo no me fiaría de ellos. If we said en ellos, it would sound like we were talking about trusting “in” a place or something physical, which doesn’t apply here, and on top of that, the verb does not allow that preposition in this meaning.
