This is not about one of the examples here, but a question in the quiz:
"Me encanta la cocina francesa, ya sea lo salado o lo dulce."
I would have expected "la salada o la dulce" because I thought it would refer back to la cocina. Why is this change in gender?

Good point!
You could actually use "la" as we are referring to la cocina francesa (feminine), but in this case we are "neutralizing it" with a "lo" because what we mean is:
I love French cuisine, things that are/every that is/dishes that are salty and things that are/everything that is/dishes that are sweet [in French cuisine]
Me encanta la cocina francesa, ya sea lo salado [los platos salados] o lo dulce [o los platos dulces]
