I was wondering why ser is used here instead of estar.

We are using "su historia es muy interesante" here because we are "defining/describing" something with an essential/permanent quality. However we could have used "su historia está muy interesante" if we were talking about something that we are watching or reading at the moment of speaking. Say, for example you are reading a book and someone asks:
and you reply:
This "está" reflects how you are finding the book while you are reading it.
It is similar to when you talk about food. You could say:
