I'm confused by the use of third person (instead of first person) of haber. Why is the sentence not "Ultimamente, me he dado por flirtear con mi jefe"?

That is a very good question!
With this structure, the verb dar is always conjugated in the 3rd person singular. The subject of the sentence here is not the person who takes the interest in doing something. The person taking the interest will appear in the form of an indirect object with an indirect pronoun, a + subject pronoun, or a+ noun/ proper noun:
Me dio por hacer footing.
A Clara le dio por hacer footing.
A ellas les ha dado por hacer footing.
A los chicos les ha dado por hacer footing.
It follows the same structure as the verb gustar.
(I added an extra sentence to the text in the lesson to reflect the 3rd p.singular conjugation)

Not sure if it's actually a good translation, but I'm thinking about it "given to" like, "Recently I have been given to flirting with my boss".
