General question
If I want to translate "The weather here in Scotland is very unpredictable" into Spanish. Can I place "aquí en Escocia" between the subject and its verb. El clima "aquí en Escocia'" es muy impredecible.

Yes you can. You can either say:
"El clima aquí en Escocia es muy impredecible." or
"El clima es muy impredecible aquí en Escocia."
They are both correct.
