When do you use cada & when todo? I know they're interchangeable, but is that the case always?

I imagine you are referring to using cada or todos los... when referring to a time phrase like this one in this exercise:
...my sister goes swimming every Saturday
In this case you can use both:
cada + the day of the week in singular, or
todos los + the day of the week in plural
so both are correct:
Mi hermana va a nadar cada sábado.
Mi hermana va a nadar todos los sábados.
