Peruvian cuisine is known for its diversity, shaped by influences from cultures around the world. For starters, ceviche is perhaps its most iconic and well-known dish. It is made with fresh fish marinated in lime juice, chili, onion and cilantro. Additionally, ají de gallina is a highly appreciated creamy stew. It combines shredded chicken with a yellow chili sauce and crushed walnuts. Furthermore, causa limeña is an irresistible cold starter [US: appetizer]. It consists of layers of yellow potatoes filled with tuna, chicken or seafood. Likewise, lomo saltado reflects the fusion of Chinese and Peruvian cuisine. It includes beef, onions and tomatoes sautéed with soy sauce. Equally popular is pachamanca, traditionally cooked underground with hot stones. Various meats are seasoned with Andean herbs such as huacatay. For those who enjoy bold flavors, rocoto relleno is an excellent choice. This spicy pepper is stuffed with spiced meat and topped with melted cheese. For dessert, suspiro a la limeña offers an unparalleled sweet experience. It is made with sweet milk spread and a port wine meringue, sprinkled with cinnamon. Exploring Peruvian gastronomy is, undoubtedly, a fascinating culinary journey.
