In Latin America, one eats a lot at Carnival. Some traditional dishes from this period are: Peruvian stew, this has beef and rice; sancochado, also from Peru, a nice little broth with essences of various meats accompanied by sweet potato or cassava. In Ecuador, the star dish of Carnival is mote with fritada, made with pork meat. In Argentina, there are choripanes and roast meat; and in Colombia we have fish and arepas.
